Delicious vegetable ragout 🍽️
(quantity in the photo)
– a fourth part of an eggplant
– the third part of the zucchini
– a third part of bell pepper
– 1 carrot
– a clove of garlic
– 1 tomato
– olive oil

Vegetables ragout recipe

Cut the eggplants and sprinkle well with salt to remove the bitterness and leave for half an hour, then rinse with water.
Cut all the vegetables into small cubes. First, I stewed eggplants and carrots in olive oil (a couple of tablespoons) for 10 minutes. Then I add the rest of the vegetables and squeeze out a clove of garlic and stew until ready. About 15 minutes.
